Linguiça sausage adds spiciness to this hearty one-pot stew of beans, potatoes, and Patagonia Provisions® Smoked Mussels.

A hearty one-pot recipe with potatoes, pinto beans, kale and savory mussels.
Ingredients
- 1 tbsp. olive oil
- ½ yellow onion, diced
- 5 oz. spicy Portuguese linguiça sausage, fully cooked and diced (optional)
- 1 medium potato, such as Yukon Gold or Red Bliss, diced
- 1 ¾ cup broth (chicken or vegetable)
- 1 (8 oz.) can pinto beans, drained and rinsed
- 2 cups kale, chopped coarsely
- 1 can Patagonia Provisions Spicy Mussels
Putting It All Together
- Heat the olive oil in a pot over a medium heat. Add the onions, linguiça and diced potatoes. Sauté them until the onion is translucent.
- Add the broth and bring it to a simmer. Add the pinto beans, kale and mussels, including the liquid from the can. Simmer the stew for approximately 10 to 15 minutes.
- Season with salt and pepper to taste. Serve hot.
